Today’s coffee is from Varietals.
This is a batch of championship coffee I bought in March. It is available because the 2020 competitions have been cancelled due to covid. The coffee is just ridiculously good. The instant you drop 20g through the Lyn Weber Onyx the room transforms into a bouquet of flowers. The flavour notes sound like a complex Michelin dish, however most of them do come through. Amazing the flavours you get can from a coffee bean and one of my first championship coffee experiences. I kept the grind at 800rpm throughout as this was back at the start of the year where I was trying to keep some of the variables fixed. I kept the bag in the freezer for special occasions, it keeps well, but ended up reordering 250g in late October and then another 500g today, I mean, why not? Remarkable consistency in the roast if you see the March and November entries in the book below. Get it here while you still can.
